60mL Seven Seasons Bush Apple Gin, 30mL Lemon Juice, 15mL Sugar Syrup and 1 Egg White. Add to a shaker with ice and shake, strain into a a glass and garnish with a lemon twist.

Harvesting

As lightning storms flash through the skies, the bright red colour of bush apples pops on the trees, making them visible for the Larrakia people against the green landscape. Monsoon season has started.

Collected from the tree tops and placed in harvesting buckets from Maningrida and from around the Darwin area by the Motlop family. These native bush apples are macerated on their skins for at least 2 weeks prior to distilling.
