There’s a deep richness to this whisky that feels like staring off into the bush at night, letting your eyes lose focus as the sounds of nature wash over you. Near perfect integration of aromas means nothing is out of place, the toasted timber, soft grains and sweet honey all singing in harmony, along with the steamy inside of just torn open damper fresh from the camp oven. On the palate, the gentle melody of springwater tinged mahogany by tea tree joins the song, which finishes with the lingering sense of eucalyptus leaves on the forest floor after rain.
As the morning sun warms the Stringybark trees, bees gather nectar to create golden Larrakia sugar bags. Woven into casks and rested for four years, it deepens with time. A true taste of the Top End.
